What's for dinner?


As most of you know, Daithí has been vegetarian for over 20 years, and I have been for 10 years. We are also raising the kids vegetarian. We eat pretty well, especially since having Síofra, but I'm always looking for new dishes to try. Here's what we had for dinner tonight...

Potato, Spinach and Chickpeas with Cumin

serves 2-3

what you need:
1 small onion, chopped finely
little bit of olive oil (about 2 Tbsp.)
1 tsp cumin seeds
1/4 tsp tumeric
2 cloves garlic, minced
2 large potatoes, chopped into 1/4 inch cubes
four big handfuls of fresh spinach
a tiny bit of chilli flakes
one can of chickpeas

what to do:
Fry the onion in the olive oil for a few minutes, until it starts to get soft. Then add the cumin seeds and tumeric and fry for another minute. Then add the garlic and fry for one more minute.

Next add the potatoes, spinach and chilli and a little bit of salt. Cook this for about 7 minutes on medium heat, stirring it regularly to make sure it doesn't stick. The spinach releases some liquid, but keep an eye on it and keep stirring to prevent sticking.
When the potatoes are tender, add the chickpeas and stir. Cook until the chickpeas are heated through. Check for seasoning, it might need a tiny bit of salt.

That's it! It's nice served with plain yogurt, naan bread and some mango chutney.
